Why does the right frying temperature change by food type?
Denser or thicker foods, like bone-in chicken, need a lower, steadier temperature so the inside cooks through before the crust burns. Thin or delicate foods — tempura vegetables, wontons — fry best at a slightly cooler or hotter temperature depending on how much moisture and coating they carry, which is why this guide breaks temperature and time out by food type instead of giving one number for everything.
How do I know when my oil has reached temperature without a thermometer?
A thermometer is by far the most reliable way — cheap clip-on digital or candy thermometers rated for frying take the guesswork out entirely. As a rough fallback, a cube of bread or a wooden chopstick dropped in oil at frying temperature should sizzle steadily with small bubbles rising around it, but this is far less precise than a real reading.
How is the oil-quantity calculator worked out?
It uses the geometry of a cylinder — volume equals π times the radius squared times the height (V = πr²h) — applied to your pot's diameter and your desired oil depth. That gives the exact volume of oil needed to reach that depth, in millilitres, liters, and US cups, so you're not guessing or over-pouring.
Is deep frying at home safe?
It can be, with sensible precautions: never fill a pot more than about halfway so oil has room to rise when food is added, keep the pot handle turned inward, never leave hot oil unattended, keep a lid nearby to smother a stovetop fire (never use water on a grease fire), and let the oil cool completely before moving or disposing of it.
